— How would you describe Falsled Kro in a nutshell?

Per: “On the island of Fyn in Denmark, Falsled Kro is a countryside boutique hotel with a farming garden where we grow our own vegetables, apples, pears and quinces. Our luxurious hotel has 19 rooms and an award-winning restaurant that is known for its gourmet cuisine.”

— What’s the history of Falsled Kro?

Per: “Falsled Kro has been an inn for almost 200 years; starting out as a smuggler’s inn for many years it was later turned into a regular Danish inn. A French couple bought the hotel and started its renovation in 1969. It then opened with a French head chef offering a distinct menu with frog legs and quails eggs. It was much to fancy for the locals so that soon it was taken over by another owner who served as the head chef for the coming 35 years. I took over the inn upon his retirement in 2008. It is quite remarkable that within 45 years there have been only three head chefs of this gourmet inn, something quite unlikely in this business.”

— How would you describe the atmosphere at the hotel?

Per: “It’s very cozy and comfortable with a casual service. It feels much more like entering a home, rather than a 3-star luxury boutique hotel.”

— Please tell us about the hotel rooms and facilities.

Per: “A road separates the buildings of Falsled Kro. Ten of the hotel’s 19 unique rooms, four suites and six double rooms, are located in the old, original building. These rooms have Spanish tiles, colored differently in each room. In the other building are nine suites and one double room, all just recently renovated. Some of these large rooms, 50 to 60 square meters, are on two levels, and almost each of them has a fireplace.

The style of the houses is timber frame, so there is a lot of wood, art pieces, Danish furniture and French objects. The colorful Spanish tiles have been in place since 1971 when the entire place was originally renovated. Our quiet atmosphere is very important to our guests. They like to take walks on the beach or relax in our gardens. As a boutique hotel we are not a resort with a lot of activities, but instead offer a place that is very luxurious and high-end but also allows people to unwind from the busy-ness of life.”

— And about the restaurant, of course!

Per: “Our kitchen serves international dishes, the best things we can buy, such as pigeon from France and scallops from the north of Norway. We serve a lot of local fish from the north of Denmark and around 80% of the vegetables are grown in our garden. The food has a refined style but isn’t minimalistic. For us, the quality and taste on the plate are what counts.

We have 60 apple trees so we make a lot of Schnapps with them, and also use quince and pear. Beer is made from herbs in the garden.”

— What is so special about the experience of staying at Falsled Kro?

Per: “When you’re sitting in the restaurant, the kitchen is open so you can see your food being prepared and cooked. There are two fireplaces and the wood surroundings make it very cozy. The high-quality products we use come from all over Europe, our oysters for example are bought fresh in Paris.

If you are staying here for two days, you can go to the beach after breakfast and swim if it’s summer, or go for a walk in the nearby forest. It’s a very relaxing experience. There is no store here; it’s just this hideaway in the countryside.”
